Dreamlight Valley Potato Leek Soup

Material:

  • 4 Large Potatoes, Peeled And Cut Into Pieces
  • 3 Leeks, Cleaned And Chopped
  • 1 Onion, Finely Chopped
  • 3 Cloves Garlic, Finely Chopped
  • 4 Cups Vegetable Or Chicken Broth
  • 1 Cup Milk Or Cream
  • 2 Tbsp Butter
  • 2 Tbsp Olive Oil
  • Salt And Pepper To Taste
  • 1 Teaspoon Dried Parsley
  • 1 Bay Leaf

Chives Or Green Onions For Garnish

Croutons For Serving (Optional)

Instruction:

Prepare The Vegetables:
Clean And Chop The Leeks.
Peel And Cut The Potatoes.
Finely Chop The Onion And Chop The Garlic Finely.

Saute Aromatics:
In A Large Pot, Heat Butter And Olive Oil Over Medium Heat.
Add Chopped Onion And Garlic, And Fry Until Soft.
Add Leeks:
Add The Chopped Leeks To The Pot And Cook Until Soft.
Add Potatoes And Broth:
Add Chopped Potatoes To The Pot.
Add To Vegetable Or Chicken Broth.
Add Salt, Pepper, Dried Oregano And Bay Leaf.
Boil:
After Bringing The Soup To A Boil, Turn Down The Heat.
Let It Cook Until The Potatoes Are Tender, Usually About 15-20 Minutes.
Mix:
Remove Bay Leaves.
Puree The Soup With A Handheld Blender Until It’s Smooth. Alternatively, Add To The Blender In Batches And Blend Until Smooth.

Add Milk Or Cream:
Add Milk Or Cream While Stirring Continuously.
Adjust The Consistency By Adding More Broth Or Milk If Necessary.

Adjust Seasoning:
Taste The Soup And Adjust The Seasoning If Necessary.

To Serve:
Ladle The Soup Into Bowls.
Garnish With Chives Or Green Onions And Add Croutons If Desired.
