Ingredients:
- 2 cups boiled pasta (penne, fusilli or macaroni)
- 1/2 cup boiled sweet corn
- 1/2 cup chopped capsicum (red, yellow, green)
- 1/4 cup chopped cucumber
- 1/4 cup cherry tomatoes (halved)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper powder to taste
- 1 teaspoon oregano or mixed herbs
- A little chopped mint or coriander (for garnish)
Method of preparation:
First wash the boiled pasta with cold water so that it does not stick and cools.
Now add the pasta, sweet corn, capsicum, cucumber and cherry tomatoes in a large bowl.
Add olive oil, lemon juice, salt, pepper and herbs and mix well.
Now keep it in the fridge for at least 15-20 minutes so that all the flavors blend well.
Add fresh mint or coriander leaves on top before serving.
Tips:
You can also add boiled chicken or paneer to it if you want to make it more protein-rich.
