Chilled Cold Pasta Salad: A Perfect Recipe for Summer!

 

If you want to eat something light, tasty and quick in summer, then cold pasta salad is a great option. This salad is not only easy to make but also healthy. Let’s learn the easy method to make this tasty and refreshing cold pasta salad.

Ingredients:

  • 2 cups boiled pasta (penne, fusilli or macaroni)
  • 1/2 cup boiled sweet corn
  • 1/2 cup chopped capsicum (red, yellow, green)
  • 1/4 cup chopped cucumber
  • 1/4 cup cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper powder to taste
  • 1 teaspoon oregano or mixed herbs
  • A little chopped mint or coriander (for garnish)

 

Method of preparation:

First wash the boiled pasta with cold water so that it does not stick and cools.

Now add the pasta, sweet corn, capsicum, cucumber and cherry tomatoes in a large bowl.

Add olive oil, lemon juice, salt, pepper and herbs and mix well.

Now keep it in the fridge for at least 15-20 minutes so that all the flavors blend well.

Add fresh mint or coriander leaves on top before serving.

Tips:

You can also add boiled chicken or paneer to it if you want to make it more protein-rich.

A little yogurt or mayonnaise can also be mixed to make the dressing more fun.
